This is the EASIEST cupcake recipe I have ever made and produces lovely, moist and über vanilla tasting gorgeousness. You’ll just die when you realise how easy this is. It will also make you bake cupcakes all the time. Beware NOT gluten free NOT dairy free and probably NOT good for you…..but ARE really really tasty.
Vanilla Cupcakes with Banana, Honey & Cream

Ingredients:
2 eggs
600ml container of thickened cream
3/4 cup castor sugar
1 cup self raising flour
3 tspn vanilla extract (or even use vanilla bean paste and you’ll get lovely vanilla bean flecks all through). I never use essence. It’s not real vanilla. It tastes like vanilla, but is completely inferior and not the same.
Honey (enough to drizzle over the top)
For Cupcakes
Method:
Crack the eggs into a cup measure.
Fill to top with cream
Pour into the bowl of electric mixer along with all of the sugar
Beat well until you see cream whip
Then add the flour and vanilla and beat slowly until combined
Put mixture into cupcake party pans and bake for about 10 mins (when they are golden on top and you can insert a skewer into them and it comes out clean)
That’s it. Seriously.
For cupcake topping
Method:
Whip remaining cream
Slice the banana
Top each cupcake with some honey to make the banana stick, two slices of banana, a dollop of whipped cream and then another swirl of honey. I also grated some chocolate on top of these ones.
